What We Eat In A Day- Healthy and Easy Breakfast, Lunch and Dinner

I am always searching for easy and healthy meal ideas. My phone may have hundreds of recipes saved on it. I love food and I love cooking. I am also a bit of a lazy cook as I have 5 kids to look after and really don’t have time to spend all day in the kitchen. Our daily meals are always pretty easy, healthy and quick.


We always go for a quick breakfast on the weekdays. Today we made oatmeal. To make the BEST oatmeal add 1 cup of organic rolled oats, 1 cup of water and 1 cup of milk of choice to a pot and simmer on low until it reaches your desired thickness. I like mine creamy and on the thinner side and my husband likes his thick so I always make it how he likes it and then just add extra milk to mine after it is done cooking. To the oatmeal I added butter, half and half, fresh blueberries, chia seeds, ground flaxseed and a little golden milk spice mixture my hubby throw’s together. Here is a similar recipe you can use to try it out for yourself. This bowl was super comforting and creamy and kept me satisficed until lunch.


Our lunches and dinners don’t actually look much different. I am blessed to be a stay at home wife so I try to make homemade meals for both lunch and dinner. We had creamy spaghetti with steamed green beans that I then sautéed in butter, lemon, soy sauce and garlic and broiled Dave’s Killer Buns with butter and garlic salt.


For dinner I felt like something we hadn’t had in a while so I made a big batch of lentils. Lentils is one of my favorite comfort foods. We served it over baked potatoes with flatbread from Trader Joe’s.


For snacks we usually just grab an apple, a handful of roasted pistachios or a kefir smoothie. We keep it super simple and easy. Like I said- 5 kids.
